Freaky Fresh Dip

This gluten free yummy dip is fast and easy to make, healthy and cheap too!

On a warm day, my gluten free Freaky Fresh Dip tastes so refreshing, like a cool glass of lemonade.

Ingredients per person

  • 1 hard boiled egg
  • 1/2 a celery stalk
  • 1/4 of an avocado
  • 1 tablespoon of gluten free Lemonaise*
  • 2 handfulls of gluten free rice chips

Multiply these ingredients per the amount of individuals who will be eating.

Take the first three ingredients and slice and dice them up as small as you can, then mash them into the Lemonaise.

*My Lemonaise has spices and lemon in it. If you are using a standard mayonnaise, add a few dashes of salt, pepper, and half a squeezed lemon or lime juice.

You may decorate the chips around the edge or provide them on a separate plate.

If you care about presentation, scoop out a ball of the Freaky Fresh Dip onto a clean plate or bowl and put some fresh unmashed slices of avocado on top for aesthetics.

For my full ingredients, click here to see picture. I use a special gluten free mayonnaise called Lemonaise by The Ojai Cook. The gluten free rice chips that taste great with this dip are Lundberg Rice Chips flavored Sesame & Seaweed.

To prepare hard boiled eggs (prefer organic eggs), place eggs into pot with water slightly over their tops. Put on medium high and boil for 15 minutes. The first few minutes are to reach a boil, 10 minutes boiled is recommended, and I just add a few minutes for safety. I usually keep hard boiled eggs on hand in the fridge at all times for a quick low-blood-sugar fix or for quick meals or snacks like this one.

    wholefood store in wesrminister colo. has a fezron pizza crust that is great here in rapid city so. dak. we don’t have that business , muffins in poppy seed , cranberry an others that are just great gluten free . help me find a way to enjoy these foods without going out of state our health food stores don’t carry any of these .
